If you're looking for a simple and healthy fried rice recipe that can be quickly whipped up, here's a rendition by our #CookwithAF participant @blurry.yck. Let's get cookin'!
Ingredients
1 tbsp light soy sauce
1 tbsp fish sauce
1/4 tsp oyster sauce
2 tbsp cooking oil
2 cloves minced garlic
200 grams minced pork
120 grams shrimps peeled
1 cup long beans finely chopped
2 eggs lightly beaten
2 cups cooked white rice
2 tbsp Alchemy Fiber™
salt and pepper to taste
Instructions
Add in 1 tablespoon of Alchemy Fiber™ into every cup of soaked rice, stir well to dissolve the powder, and let rice cook. Once done, leave rice to cool.
Heat up a wok or pan with cooking oil. Add garlic and stir fry till aromatic. Then, add the minced pork, shrimp, and long beans into the wok. Stir-fry until the minced pork and shrimps are half cooked. Add in the rice and stir well with the ingredients. Add the fish sauce, soy sauce, oyster sauce, white pepper and continue to stir the fried rice for a couple of minutes.
Using the spatula, push the rice to the side of the wok and make a "well" in the middle of the fried rice. Pour the beaten eggs in the "well." Wait for 30 seconds and then cover the eggs with the fried rice. Leave the eggs to cook for 1 minute before you continue to stir-fry so that they can take shape into chunks, then mix well with the other ingredients. Add salt to taste, dish out and serve it hot.
