Mala Fried Rice Recipe

Our Mala Fried Rice recipe takes comfort food to a whole new level, combining your favourite fried rice with tongue-tingling Mala and other yummy toppings. The surprise: there is nothing to fry so it is a no-mess and easy recipe but the end result tastes like fried rice, done the conventional way. Experience a healthier and easier take to this rice dish with Alchemy Fibre™ For Rice being the secret ingredient to lowering the GI and increasing the fibre in this dish! Let’s try this out!

Here’s what you need:

  • 2 cups rice

  • 2 heaped tbsp of Alchemy Fibre™ For Rice

  • 2 medium potatoes (cut into cubes)

  • 1 large King oyster mushroom (cut into cubes)

  • 1 Chinese sausage (cut into cubes or slices)

  • 2tbsp of soy sauce

  • 1 tbsp of dark soy sauce

  • Mala sauce (2 tbsp)

  • Generous dash of Shao Xing (Hua Tiao) wine

  • Chili Oil (optional)

  • Spring onions/coriander for garnish




Instructions


Wash and drain 2 cups of rice. Add two heaps of Alchemy Fibre™ For Rice to the rice. 


Set to cook in rice cooker as usual.




Meanwhile, prep the other ingredients. Cut potatoes, mushrooms and chinese sausage (remove casing first).



Measure the Mala sauce and coat the diced potatoes with the sauce. Set aside.



When rice is about 10 minutes from finishing cook time, add in seasoned potatoes and all of the seasonings, give the rice a gentle stir.



Then, toss in mushrooms and Chinese sausages. Cover the rice cooker and let it cook for rest of cook time.



When cook time is completed, garnish with chopped spring onions/coriander. Your healthier Mala Fried Rice is now ready to be served!
